
Shrimp, Roasted Veggies and Pasta
2 ripe tomatoes
1 big zucchini
1 big onion
4 cloves of garlic
2 red peppers
Place the vegetables into a roaster, cover with aluminum foil. Roast the veggies ( tomatoes, zucchini, onion, garlic, red pepper) in oven until done.
2 sticks real butter
1 clove garlic
capers (according to taste)
1-2 cups white dry wine
1 pound raw shrimp
Put the butter, garlic and capers in large pan along with white dry wine. Let it simmer together for at least 5-10 minutes. Put in the the raw shrimp. Saute until shrimps are done, about 3-5 minutes.
Pour veggies over cooked pasta, then put the shrimp on top. You can top with freshly grated parmesan cheese.
