You may opt to choose low-fat milk and cheese substitutes. This is a perfect addition to your Thanksgiving dinner!

Cheesy Mashed Potato

Ingredients:
- russet potatoes - 2 pounds, peeled, cut into chunks, cooked until tender
- hot milk - 3/4 to 1 cup
- butter - 2 tbsp
- onion powder - 1/2 tsp
- salt - to taste
- ground black pepper - 1/2 tsp
- Cheddar cheese - 1 cup, shredded
- chives - 1 tbsp, chopped
Instructions:
- Drain cooked potatoes well and return to the pot.
- Add milk, butter, onion powder, salt, and pepper. Mash well.
- Stir in Cheddar cheese.
- Gently re-heat mashed potatoes, stirring constantly, until all of the cheese has melted.
- Pour into serving bowl and sprinkle with chopped chives.
- Serve immediately.
